Pumpkin Spice Oatmeal Cookies

Ingredients

2 cups gluten free rolled oats

1 banana, mashed

1/2 pumpkin puree

1 cup medjool dates, pitted

1/4 cup coconut oil

1/4 cup coconut or almond milk

2 tsp vanilla extract

2 tsp pumpkin spice

1/2 salt

2 tbs of ground chia seeds

1/2 cup dairy free chocolate chips

Directions

  1. Preheat oven to 350. Line a baking sheet with parchment paper and set aside.

  2. Add the following to a high speed blender (Vitamix): banana, pumpkin, dates, coconut oil, coconut milk, & vanilla extract. Blend until smooth.

  3. Fold in the dry ingredients (oats, pumpkin spice, salt, and chia seeds), and mix until combined.

  4. Form individual cookies using a spoon and bake for 20 minutes

  5. Enjoy!
